In this chapter we discuss one of the typical products of the Veneto Region, considered a winter flower, the Radicchio Variegato from Castelfranco.

The Radicchio Variegato from Castelfranco, also called "Rosa di Castelfranco" or "Flower you eat", is one of the most noble and characteristic typical products of the Veneto Region and, thanks also to its beauty, it is considered the prince of white radicchio.

Its history is closely linked to that of Treviso’s Radicchio Rosso Tardivo, in fact it is obtained from the cross between the latter and the escarole, an open-head salad. In particular, from the escarole he inherited the characteristic broad leaf with a cream white color, while from the Radicchio Rosso Tardivo di Treviso he took the intense and bright coloring of the veins and the natural predisposition for whitening.

The product obtained is a true masterpiece, a delight for the palate, given that at the same time it is both tender and crunchy, both sweet and slightly bitter. The local tradition prefers it especially used raw, in a simple mixed salad, but there is nothing that can be used as an ingredient in other tasty recipes, such as soups, risotto and pancakes.

The important thing is that cooking is fast, so as to safeguard the organoleptic characteristics. Radicchio Variegato from Castelfranco boasts the IGP brand since 1996.
